Summer Recipe & Amy Butler's Cameo!


....Hello Friends!....

 

It's SUMMERTIME in Texas, and we are loving it! One of my all-time favorite summer meals is Taco Salad.    The big bowl I made this week:


Here's the recipe if you'd like to try it!  
I'm sure it's quite similar to many out there, but we absolutely love this one!

TACO SALAD
1 LARGE head of lettuce, chopped
1 can light red kidney beans, washed & drained
2-3 cups shredded cheddar  > in my opinion, you have to put in alot of cheese!
1 package Nacho Cheese Doritos

1 lb ground sirlion + 1 pkg Taco Bell Taco seasoning

about 10 oz thousand island dressing (buy the regular 16 oz size & you'll have plenty!)
1/2 cup sugar
2 Tablespoons medium salsa

Preapre meat & seasoning accoding to package directions.   Prepare sauce by stirring all together in a separate bowl...I let it sit a little so the sugar dissolves.  Toss all together &  add Doritos last.   

TIPS:   only add a few Doritos if you think you'll be saving some of the salad as leftovers (they get soggy & you can always add fresh ones as you go!)  If you don't have enough dressing, just toss a little more thousand island and a bit of sugar together, then add to the salad.

Man! Is that 1/2 C sugar in the taco salad a typo? I made it and wow is it too sweet or what! Gag. Had to toss it. Luv ya anyway. :)

Hi Mary! So sorry you didn't like it! No, it's not a typo, that's how I've always made it. :o) If you used less thousand island & salsa, it might be too sweet...I've always thought it was just perfect, with the measurements listed! Maybe we just have different tastebuds. :o))
